Breakfast challenge – week 4

Week four and still going strong. Interestingly I am having more and more ideas so rather than counting down the days to finish I am actually adding more and more options to my breakfast menu.

I am just looking through my list from this week and trying to decide on the favourite. And hands down it needs to be the hot water oats topped with a fried egg, tomatoes and pesto. What makes it, in my opinion, is a pinch of coarse sea salt. If you haven’t tried savoury oats, do yourself a favour and try. What’s the worst that can happen? And if things work out, you will have a friend for life, like I do.

I have also indulged in poached eggs on sautéed spinach, home made granola with almond milk, blueberries and bananas, overnight oats with berry compote, kale smoothie, a toast with warm, crushed beans topped with fried leek, pinch of salt and hemp seed oil. I also made a very berry smoothie.

It has been a very good week even if I say so myself. Technically I could finish now, as I achieved what I set up to do (and that’s always a good feeling), but I am still coming up with ideas so I will just keep going in a hope that I can inspire you to try new ideas for your breakfast as well.
