Ingredients
- 1 bunch carrot tops get organic if you can
- 1 cup basil leaves
- 1 small leek white parts only (Optional)
- 1/4 cup pine nuts
- 1/4 cup ground almonds
- 1/2 cup olive oil
- 1/2 cup nutritional yeast
- 1 clove minced garlic
- 1 tablespoon lemon juice
- salt to taste

Instructions
- Remove the carrot tops from the stalks
- Add all ingredients to a blender (or food processor) and blend together until smooth (or your desired consistency).
- You may need to add a little more oil. I also add couple of spoons of water if needed, to loosen it up a little.
- Adjust seasoning and enjoy as you would any other pesto.
