I opened my fridge, looked in the vegetable drawer and despaired. I had 4 big parsnips and half of a swede, both of them past their best. To make matters worst I received another 1kg of fresh parsnip in my weekly vegetable box. Now, don’t get me wrong, I like parsnips, and I like swede, but honestly how much of them can one person eat?? And what to do with them? I wasn’t in a mood for parsnip soup. To be honest I wasn’t in a mood to cook and eat parsnip whatsoever, but then I am never in a mood for waste!
I thought, fine, I will just roast the suckers and add them to my lunch box throughout the week. So I set out to work, I peeled, I chopped and then the inspiration hit! And the result is spectacular, even if I say so myself.
