Ingredients
- 5 sticks rhubarb
- 3/4 cup liquid (fruit tea, fruit juice or semi-sweet white wine)
- 1-2 tablespoons honey or maple syrup

- Wash the rhubarb and chop in bite size pieces
- Combine all the ingredients in a ovenproof dish and roast at 180C for about 20 minutes until rhubarb is soft, but not mushy.
Recipe Notes
Use the roasted rhubarb:
1. In a smoothie (add a frozen banana, strawberries, 1 tablespoon of cashew nut butter for a sweet version. Add fresh spinach leaves for a healthier option)
2. Use to top your morning porridge or yogurt
3. You can also use it for a base of a crumble
