Ingredients
- 0.5 savoy cabbage
- 1 small broccoli
- 1.5 cup raisins
Dressing
- 2 teaspoons tahini
- 3 teaspoons lemon juice
- 1 teaspoon olive oil
- 2 teaspoons water
- salt to taste
Servings:
Instructions
- 1. Soak raisins in boiling water to allow them to plump up
- 2. Thinly slice the cabbage. You can also grate it (food processor would make it a quick job but I am put off by the amount of washing up). Add a pinch of salt and massage the cabbage for couple of minutes as you would do kale, until the cabbage reduces in size and leave it for at least 30 minutes to soften
- 3. Chop broccoli into smaller florets
- 4. Drain the raisin
- 5. Mix all the dressing ingredients. If it's too thick add a little more water and touch of olive oil. If it's too thin, add a little bit of tahini
- 6. Mix all together, adjust seasoning and enjoy
