Sweet potato soup with coconut milk

One day my sister said: I feel like soup. There was no soup to be had, but quick look around the kitchen allowed me to accept this challenge. This is such a tasty, warming soup, made with my favourite, favourite sweet potatoes. They have lots of benefits, but the most important one at the moment for me at the moment is that they are rich in Vitamin D, which is critical for immune system and plays an important role in our energy levels, moods, and helps to build healthy bones, heart, nerves, skin, and teeth, and it supports the thyroid gland.

Instructions
  1. Preheat your oven to 200C
  2. Wash, peel and chop your vegetables, saving one of the potatoes for roasting
  3. Chop the potato for roasting in bite size pieces, mix it with a little bit of oil, salt and a little bit of hot smoked paprika. Roast for about 20 minutes until soft
  4. Fry chopped onions and celery for a couple of minutes and add remaining vegetables and seasoning, mix and let it cook for a couple of minutes
  5. Add coconut milk, water and cook until vegetables are tender
  6. Blend until desire smoothness and adjust seasoning. You may want to add some more water to achieve desired thickness
  7. Serve with roasted potatoes chunks and chopped coriander
