Instructions
  1. Peel and chop the white onion
  2. Heat oil in the pan and add chopped onion and minced garlic. Let it cook for few minutes until onions are translucent
  3. Add cumin powder and and chopped chilli pepper. You can deseed the chillies for less heat in the dish. Let it cook for 2 minutes
  4. Add the cooked (or canned) beans and let it all cook for 5 minutes.
  5. Add the reserved beans cooking water or vegetable stock. Mix well and let it simmer on low heat for 20-30 minutes, stirring occasionally until the liquid evaporates and the beans thicken.
  6. The longer you cook it, the softer and more delicious the beans will be. You may need to add additional stock or a little water if it gets too thick.
  7. Season to taste. I sometimes add a squeeze of lemon juice right before eating. Enjoy!
