A great side dish, perfect to serve for Mexican themed dinner. You can use canned beans to save cooking time.

Ingredients
- 2 cups cooked pinto or black beans Can use canned
- 1 very large white onion
- 4 cloves minced garlic
- 1 teaspoon ground cumin
- 1-2 red chilli pepper chopped
- oil for cooking
- saved bean cooking water or 2 cups for vegetable stock
- salt

Instructions
- Peel and chop the white onion
- Heat oil in the pan and add chopped onion and minced garlic. Let it cook for few minutes until onions are translucent
- Add cumin powder and and chopped chilli pepper. You can deseed the chillies for less heat in the dish. Let it cook for 2 minutes
- Add the cooked (or canned) beans and let it all cook for 5 minutes.
- Add the reserved beans cooking water or vegetable stock. Mix well and let it simmer on low heat for 20-30 minutes, stirring occasionally until the liquid evaporates and the beans thicken.
- The longer you cook it, the softer and more delicious the beans will be. You may need to add additional stock or a little water if it gets too thick.
- Season to taste. I sometimes add a squeeze of lemon juice right before eating. Enjoy!
