My sister and I sat at a kitchen table yesterday, working, and at lunchtime she said: “I feel like having some soup”. Simple enough, but there was no soup to be had.
Those, who know me well, know that saying something like this means a call to action. So action I took and I am quite proud of this one. It has just enough spice to balance the sweetness of the potatoes, coriander adds freshness and roasted potatoes chunks add more texture.
Serve as it is or with some fresh bread. Depending on how hungry you and the guests are this would serve 4 to 6 people. But don’t feel guilty if you just want to eat it all alone.
