What do I eat?

The question I get asked the most often is: “so what do you eat“? I usually answer with a simple EVERYTHING, but that doesn’t cut it in most cases. So I thought today I give you a sneak peak into my day on the plate.

I eat mostly plant based diet, but every now and again – I enjoy eggs. This is my favourite way to have eggs:

Late morning I might snack on some nuts or my roasted pumpkin seeds. I think we all need more pumpkin seeds in our lives.

If I am not really hungry I sometimes have a green smoothie for lunch. Smoothie is a full meal in a glass, and because it’s blended it gives your digestive system a break. Here is one of my all time favours.

It’s topped with strabwerries and chocolate, so you can also have it as snack or a treat.

I like to keep it simple with dinner and this quinoa salad is a perfect option. Added bonus: if you make more of it – it’s perfect for lunch the next day.

I also drink a lot of water, and green tea all day long. I try to limit myself to 3 cups a day, but on some days I fail, and enjoy another one.
